Looking to clean up your breakfast act? This is a good place to start. Easy to throw together in minutes the night before: low in fat, high in fiber, protein with no processed sugar. It's totally delicious and will keep you going through whatever mother nature or you boss throws at you.
2 apples, skin on, grated
juice of 2 clementines (or juice of a small orange)
1 1/2 c thick rolled oats (not instant)
1 cup 2% Greek-style yogurt
1/2 t Ceylon cinnamon
1 t vanilla
1/4 c toasted hazelnuts, chopped
1/4 c toasted almonds, roughly sliced
1/8 c chia seeds
maple syrup (optional)
Mix together the oats, apples, clementine juice, yogurt, vanilla and cinnamon in a bowl.
Cover and refrigerate overnight.
When you are ready to serve, mix in some chia seeds and top with the toasted nuts and a little maple syrup.
