Like many, I try to keep things on the lighter and brighter side after the holidays.  This is one of my favorite breakfasts year-round but it comes into serious rotation at the beginning of the year, especially because avocados at at their best.  Yes, it's a blast of superfoods to start your day.  If you are not familiar with the health benefits turmeric, I encourage you to pick up a jar.  I'm not certain that this small amount will make a meaningful contribution to your overall health but it's certainly a step in the can't hurt direction.

This superseed mix is something I always have in my pantry. Toss it in salads, over greek yogurt with a drizzle of maple syrup  or as an ice cream topping.  You can leave out the harrisa, especially if you will be using it to pair with sweet stuff.

Leave out the bread and serve it over quinoa for a super delicious gluten-free/paleo option.

1 ripe avocado, sliced

olive oil

lime

turmeric

superseed mix (see below)

sea salt

whole grain bread, toasted

superseed mix

sliced almonds, preferably organic

chia seeds

sunflower seeds

black sesame seeds

roasted and salted pumpkin seeds

hemp seeds

sea salt to taste

1 t harissa (optional)

Mix together the seeds, nuts and spice blend in amounts according to your preference.

Arrange the sliced avocado on a plate, drizzle with olive oil, add a big squeeze of lime and sprinkle with some turmeric.  Add a generous amount of the superseed mix, a little sea salt to taste and serve with toasted bread.
