This smoothie serves two purposes in my world: a quick breakfast (one that you can easily take with you) and a pre-workout savior. You get some fruit, protein, calcium and a little boost (and blast of antioxidants) from the coffee.
Some people are a little confused about using coconut milk. I'm not talking about the stuff in a can; that's for cooking, making curries, etc. This is the stuff for drinking. Look for it either in a carton in the milk section or where you would find other non-daily milks like soy and almond milk. For this smoothie, I would suggest using an unsweetened version as the bananas are sugary enough.
I know I've talked about this before but as a reminder, I like to keep a large ziplock bag in the freezer for bananas that are about to break bad. Peel them, slice in half and toss in the freezer. This way, you'll always have a great smoothie base on hand. If you like the idea of this shake but don't want the caffeine, try this super-healthy smoothie instead.

makes about 24 oz
1.5 frozen bananas
1 scoop vanilla or chocolate protein powder
2 c coconut milk
1 shot of espresso
Blend and serve immediately.
