This is how I get people out of bed in the morning.

I don't know about you, but my day is no bueno without protein for breakfast.  Burritos are, in general, pretty fabulous because (1) you can fill them with whatever you want (2) they are portable  and (3) they make everyone else super jealous.  Use this recipe as a mere guideline.

breakfast burritos

flour tortillas, warmed (I used chipotle-lime)

cooked black or pinto beans (well-drained if you are using canned)

eggs

milk (for the scrambling the eggs)

cheese

cooked bacon or ham, chopped

scallions, sliced into rounds

a pinch of cayenne

salt and pepper

avocado, chopped

hot sauce (we have a thing for Cholula)

oil 

other suggestions:

egg whites

leftover roasted potatoes

sprouts

salsa

chopped tomatoes

Heat a skillet to medium and coat with a little oil.  Whisk the eggs with a little bit of milk (I'm making a leap here an assuming that you know how to scramble some eggs) season with a pinch of cayenne, some salt and a few cracks of pepper.  Add your eggs to the pan and let them begin to cook a bit.

Add the beans, scallions and bacon and begin to scramble.  Right before the eggs are cooked though, add the cheese and give it a few turns to melt and distribute it evenly.

Top each tortilla with some of the egg mixture, garnish with some avocado, maybe a few shakes of hot sauce and roll them up.  This is best done by positioning the eggs at the bottom 1/3 of the tortilla.

Fold in the sides and begin to roll from the bottom, tucking in the eggs as you go.  And then you can tuck in.
