I just spent a few days on the road, far far away from my juicer. While I did find a really great fresh juice place along the way, it's just never quite the same. Don't get me wrong, there is nothing bad/wrong about having someone else make it for you. I suppose I just love the comforting sound of whirl of my juicer, the smell of the fresh juice. AND to further solidify my place in the Juice Geek Hall of Fame, I also add to my glass of fresh pressed juice a couple of tablespoons of chia "gel". For those of you who only know chia via cha-cha-cha-chia, the seeds are a pretty easy way to add a substantial amount of fiber to your diet as well as being loaded with antioxidants and omega-3.
6 medium organic carrots
3 medium organic apples (I used gala)
2-3" knob of ginger (I like it spicy)
Juice and enjoy. It will keep in an airtight container (I love using mason jars) for about 2 days although it's best to drink it immediately.
For the chia gel:
1/4 c chia seeds
Pour some chia seeds into a mason jar.
Cover with water and shake it a bit.
In about 15 minutes, the seeds will swell and the gel will form.
It will keep in an airtight container for about 2 weeks. Add it to juices, tea, smoothies...
