chocolate-banana protein pancakes

IMG_4974We've been working on a psuedo-paleo-more protein/less gluten thing in our house in an attempt to jack up our general health as we head into the back-to-school season.  Not only are these pancakes pretty tasty, they are also PACKED with protein to keep you well-fueled for what ever your day may bring.

Like most gluten-free things, the batter is pretty thin, even crepe-like, so take extra care when cooking them.  They reheat well and are even good right out of the fridge with a little smear of peanut butter later in the day.

chocolate-banana protein pancakes

adapted from Daily Burn

makes about 6 pancakes

2 scoops chocolate protein powder 

2 T almond flour

2 T ground flax seeds

1 T raw cacoa powder

1/2 teaspoon baking powder

1/2 t cinnamon

2 eggs

1 very ripe banana, mashed

4 T almond milk

handful of chopped walnuts (optional)

coconut or olive oil for cooking


Mix all of the ingredients together.


Cook over med-high heat.
