We've been working on a psuedo-paleo-more protein/less gluten thing in our house in an attempt to jack up our general health as we head into the back-to-school season. Not only are these pancakes pretty tasty, they are also PACKED with protein to keep you well-fueled for what ever your day may bring.
Like most gluten-free things, the batter is pretty thin, even crepe-like, so take extra care when cooking them. They reheat well and are even good right out of the fridge with a little smear of peanut butter later in the day.
