Giving something homemade to friends, co-workers, maybe your dental hygienist, around the holidays is such a lovely way to say hey! I like you. If you are anything like me, I like a lot of people which can easily turn into a lot of work. I used to do the truffle thing, sometimes granola, spice rubs or even the occasional gingerbread gift package. All nice but why why why when there is chocolate bark to be made? It's so simple, you need no talent and kids can help if that's a positive. I like to make extra, of course, for my house but tuck the majority away in cute weck or mason jars tied with twine. People want this. Trust me.
Tall, dark and spicy this bark is. The heat comes on at the end so you may want to tinker with the amount of chipotle you use. The pumpkin seeds add a surprising amount of flavor and that much wanted crunch. I tried a batch with dried cherries, too, but there was too much going on for me. If spice is not your thing, try this bark. Either way, you can't go wrong.
chocolate bark with pumpkin seeds + chipotle
10 oz best quality semi-sweet dark chocolate 1 c roasted salter pumpkin seeds 1/2-1 t ground chipotle pepper smoked sea salt
Line a baking sheet with parchment paper. Melt the chocolate in your microwave. Usually starting with 2 minutes, giving a stir and then back in for 30 seconds gets the job done.
Stir the chipotle into the chocolate. Add the pumpkin seeds and spread the mixture out evenly onto the parchment paper.
Sprinkle with a bit of the smoked sea salt and chill until it hardens.
Break it in to pieces and spread the love.
