Just a little help for my friends in this mad season of football-related parties. I could not care less about such things but I find myself often in a room with the TV blaring and Tom Brady. Or at least that's how I see it.
This is actually a sneaky re-post from my fish taco recipe a few weeks back. When my daughter recently asked that I send her my guacamole recipe, I realized it could easily have been overlooked. You'll want to double this if you are bring it to a friend's house.
And you all know the trick of keeping the pit (in this case use two) and burying it in the guacamole if you are making it ahead of time. That will keep the avocado from browning. Obviously, remove the pit(s) before serving.
2 large, ripe avocados diced
1/2 cup of quartered grape tomatoes
1/2 small onion diced
1/4 cup cilantro roughly chopped
1 clove of garlic diced
1 bird chili finely diced (you can certainly use a jalapeño but I find most grocery store offerings to lack heat)
1 t ground cumin
juice of 1 medium lime or more to taste
Mix all of the above together to make a somewhat chunky guacamole.
