Life is all about balance, right? You eat too much, you repent. You take a spin class, do some yoga. Maybe run the stadium stairs.
Or maybe you just eat more kale.
This keeps well for a couple of days so don't hesitate to make it the night before and pack it for lunch. The chickpeas and quinoa give the salad some serious substance. If you need a little something more, crumbled feta works really well, too.
kale + quinoa salad with lime + sumac dressing
1 c chick peas
1 c cooked red quinoa
1/2 c sliced almonds
1/2 c micro cilantro (or pea shoots)
5 c kale, tough stems remove and chopped
1/4 c dried cherries
for the dressing:
1/3 c olive oil
juice of 2 limes (or to taste)
2 garlic cloves
1/2 t red pepper flakes
3/4 t sumac
1 T honey
salt to taste
Whisk together the ingredients for the dressing and toss all of the salad components together, except the sliced almonds which you will want to add just before serving.
