I love these bars. They have enough stuff to be good for you: quinoa, oats, chia seeds, etc. PLUS all of the satisfying crunch and decadence to be a legit sweet treat. They are truly energy bars; providing a whole-foods derived balance of (good) fat, protein, carbs and fiber. Topped off, of course, with a necessary dash of chocolate.
Want to make them vegan? Leave out the egg, increase the coconut oil to 1/3 c and the peanut butter to 5 T.
Just be sure and check your (chia) teeth before you smile.
nutty quinoa + chocolate chip granola bars
2 c thick rolled oats
1 c quinoa flakes
1/2 c pumpkin seeds
1/2 c dry roasted lightly salted peanuts
1/4 c chia seeds
1/2 c bitter or semi-sweet chocolate chips
1 t sea salt
1 egg, beaten
1/3 c maple syrup
1/4 c coconut oil
1/4 c coconut sugar (or regular)
4 T peanut butter
Preheat oven to 350
Mix all of the dry ingredients together in a large mixing bowl. Add the egg and mix well. In a medium saucepan, melt together the maple syrup, coconut oil, peanut butter and sugar.
Pour it over the oats mixture and stir until it all comes together. Line a 9x12 glass baking pan with parchment and press the mixture evenly into the dish.
Bake for about 20-25 minutes. Allow it to cool completely before cutting into bars.
