pomelo, blood orange and grapefruit salad

Consider this a little help from your dear friend, Mother Nature.  Well, and me.  One pomelo has about 200% of your daily vitamin C requirement. Just looking at this salad might actually make you feel better. GORGEOUS citrus is everywhere right now so I totally encourage you to take full advantage of the stuff.  Pomelo is the largest of the citrus family and has a super-intense grapefruity flavor.  In Chinese medicine, the thick rinds are boiled and then used in a bath to repel evil.  Let me know how that goes.

I've been obsessed with all things Scandinavian lately and have been trying edlerflower syrup in lots of things...some more successful than others.  This would be in the successful column. The floral notes pair perfectly with the citrus and make the salad pop. It's great to make the night before and wake up to.

pomelo, blood orange and grapefruit salad

1 pomelo, sectioned (or substitute any large grapefruit)

1 red grapefruit, sectioned

1 blood orange, peeled and cut in rounds

2 t elderflower syrup

1/2 t ginger, peeled and grated

Combine and serve.
