quinoa parfait with mango yogurt, strawberries and pepitas

I have to admit that I am a little obsessed.  There is something slightly addictive about the combination of these textures.  The fresh fruit, the earthy bite of the quinoa, the sweet creaminess of the yogurt, topped off with the crunch and salt of the pumpkin seeds.  I hope I'm not overselling.  The truth is, how many new things have you added to your breakfast rotation?  It tends to be one very boringly habitual meal.  Time to break it up.

Don't for a minute limit yourself to my fruit and yogurt  choices.  I love this with raspberries, slice grapes, blueberries...I'm sure you can dream up some incredible flavor combinations.  If you are not familiar with Noosa, I urge you to check it out.  It's super creamy, tangy, not too sweet.  Use Greek-style yogurt in it's place if you can't find it, maybe a drizzle of honey, too, if you are so inclined.  And it's great to take on the go.
