The smoke really made the pears sing (there is a very bad joke to be made here but let's move on) In any case, this salad pairs very nicely with the pork sausages with beer and maple reduction, mac and cheese or does just fine on its own. Although, I would probably add an intensely tangy blue cheese and serve with some warm, crusty bread.
salad of butter lettuce, sautéed pears and pistachios with maple vinaigrette
1 large head of butter lettuce, washed and torn
1 large firmish pear, sliced
1/4 c pistachios, roughly chopped
1 T butter
1/2 t sugar
a pinch or two of smoke sea salt (or regular)
To sauté the pears, melt the butter in a large skillet, add the pears and cook over med-low heat until they begin to soften and color. Add some salt, the sugar and cook a bit more. Taste for seasoning and let cool a bit before adding to the salad.
1 cup olive oil
1/3 cup apple cider vinegar
1/8 c maple syrup
1 small shallot
1 t dijon mustard
salt and pepper to taste
whiz all but the oil in a blender, slowly pour in the oil through the feeder tube while the still running to emulsify.
