nutty raw balls



What happens when a friend gives you a bag of almond pulp? Well, you make raw balls of course.

Now, I realize that most of you will not have almond pulp on hand.  I also realize that making almond milk is costly and time consuming.  Hey, but so is liposuction.  Do it once, make almond milk, that is, and you'll have a fun cocktail party story to tell AND you can make this delicious smoothie and these balls, to boot.

But why would you even want to make said balls?  Well, they are nutritious and delicious and they make you feel ambitious.  And they are way better for you than cold spoonfuls of stuffing right out the fridge. If all of this nut milking stuff is too much for you, fear not. You can make these instead.

smokin' nutty raw balls

1/3 c roasted salted pepitas

1/3 c sunflower seeds

1/3 c chia seeds

1/2 c dried sour cherries

2 c almond pulp 

1/3-1/2 c coconut oil

1/3-1/2 c maple syrup

shredded coconut (unsweetened)

alderwood smoked sea salt

Place the almond pulp, pepitas, seeds, cherries and coconut oil in the bowl of a food processor.

Pulse a few times and add the maple syrup through the feeder tube, continuing to process until it all comes together, add more coconut oil and/or maple syrup as needed.

Mix the shredded coconut and a pinch or two of smoked sea salt together on a plate.

Form the dough into balls and gently roll in the coconut, pressing the mixture to coat.



Cover and refrigerate until firm.  They last 3-4 days.
