spicy greens salad with dried figs and aged sherry vinaigrette

I have a thing for figs.  They are, sadly, only in season for a very short time and the results are uneven at best.  I have found the best way around the fickle fig problem to ALWAYS have a bag of dried figs in the fridge, ready to toss into salad, granola or simply satisfy a sweet tooth.  While the figs are one of the bright spots in this salad, the real magic comes from the Gran Capirete. This sherry vinegar is aged in American oak barrels and is so ridiculously smooth and rich.  You really don't need much more than a good olive oil and some salt and pepper to make a stand-out dressing.

The assertiveness of the greens, acidity of the vinegar and the bite of the radishes are a perfect match for serving along side a cheese plate.  Otherwise, I would suggest adding in some gorgeous blue cheese.

spicy greens salad with dried figs and aged sherry vinaigrette

6 c or so of spicy mixed greens (such as mizuna, radish greens, watercress, frisee, arugula)

a handful of radishes, sliced

two handfuls of pine nuts, toasted

a handful of dried figs, stemmed and sliced

Gran Capirete Vinagre de Jerez (aged sherry vinegar) or any super quality sherry vinegar

Good quality extra-virgin olive oil

salt and pepper to taste

Mix together the olive oil and vinegar to your taste.

Toss in the greens, radishes, figs, nuts and serve.
