Trussing 101

Cut a piece of kitchen twine about one and 1/2 your arm's length.  Center the twine under the breast where the neck used to be.  Pull the twine towards you and run it along the sides of the breast to plump up the breast as best you can.  Tie a knot under the end of the breast.

Take the two ends and wrap them around the legs, bringing them together to seal up the cavity as tightly as possible.  Tie another knot and you are done!
