za'atar-lemon grilled chicken

Za'atar.  Oh how I love thee.

If you are not familiar with this traditional Middle Eastern spice mix, get your hands on some now.  To me, it is the quintessential summer spice mix.  A great blend has just the right amount of sumac, sesame seeds, cumin, thyme, oregano and marjoram. Mix some into some decent quality olive oil, serve with some warm flatbread and you have the perfect appetizer for a warm summer evening.  Use it as a dry rub or in a marinade as I've done here.  Prepare to be smitten.

Serve the chicken with grilled lemon rounds, maybe a simple cucumber, tomato and mint  salad, some flatbread, olives and be done.

za'atar-lemon grilled chicken

4 bone-in, skin-on chicken breasts

1/4 c olive oil

juice of 2 lemons

zest of 1 lemon

3 cloves of garlic, minced

1 oz Za'atar 

2 lemons, cut into rounds and marked on the grill

Mix together all of the ingredients for the marinade and coat the chicken evenly.

Cover and refrigerate for at least 4 hours.  Grill over medium-low heat until done.
